El Fogón de Jovel was born 30 years ago in the heart of San Cristóbal de las Casas with the aim of showing the true gastronomy of the region to as many people as possible.
It is one of the most typical restaurants in Chiapas and the city of San Cristóbal de las Casas.
The restaurant El Fogón de Jovel can accommodate up to 150 people, in the pleasant atmosphere of a large colonial house dating from the early 20th century, located in the heart of the historic center of San Cristóbal de Las Casas, with three rooms decorated and furnished :

⇒ From a historical perspective of Zapatismo in Chiapas and Chiapas orchids and hummingbirds.
⇒ From a patio decorated with many plants, in which orchids and bromeliads stand out.
⇒ Walls decorated with paintings and embroidery made by local artists and artisans.
The cooks and waiters at El Fogón de Jovel are local children and speak Tzotsil, the ancestral language of the Chiapas mountains.
They have brought to the dishes at El Fogón de Jovel restaurant the simple and healthy flavor of natural products common in Chiapas cuisine.
They come from different towns in these mountains – Chamula, Zinacantan, Larrainzar, Tenejapa, Huistan, Chenalho, Oxchuc and Yajalon – and proudly wear their ancestral traditional costume.
Chiapas, this territory of steep mountains in southeastern Mexico, is the ancestral homeland of corn and cocoa.
In addition to these sacred foods, there are other products of the earth such as tomatoes, chayotes, pumpkin, beans, potatoes, yucca, chipiline and deer meat, pheasants, fish and turtles.
With the Hispanic conquest 500 years ago came wheat, cattle and chickens.
During the colonial era, the isolation and remoteness of the cities of New Spain and the General Capitol of Central America made the combination of these foods a tasty but different cuisine.

Delicious cream made from corn kernels and natural milk.
Cream of bean soup
Tasty cream made from black beans, topped with fried tortillas, cheese and cream.
Cream of Vegetable Cream
Made with vegetables, cut this morning by indigenous hands in the Altiplano of Chiapas.
Beef or chicken consommé
Nutritious soups rich in vitamins and 100% natural protein. They are accompanied by rice.
Chopped vegetables
Beans, Chayotes and/or Cauliflower wrapped in egg, served with a cream sauce and rice. A very good dish suitable for vegetarians.

Fine roast beef tenderloin fillets with onion, melted cheese, lettuce leaves and tomato slices.
Cecina Chiapaneca
Beef marinated in sour orange juice and dried slowly in the sun. Served with beans from the pot to combine your special taste.
Roasted Torito
Small pieces of juicy beef, previously cooked and then seasoned a la plancha. It is accompanied by a piece of corn cooked with natural butter and grated cheese.

Beef or chicken fajitas
Slices of beef or chicken breast, grilled and seasoned with onion and chilli pepper strips
Exquisite chicken soup cooked with carrot, chayote, potato, pumpkin and corn, seasoned with aromatic herbs. The chicken is passed over the embers and served with rice, avocado and onion jalapeño sauce.
Mole of Chiapas
Chicken meat in a chocolate stew, guajilloet “ancho” peppers, other spices and condiments. Decorated with feathers of cocoa and sesame.
Pepian
Chicken stew made with red and green tomatoes, banana peels, pumpkin seeds, roasted and ground, coriander and other regional seasonings.
Peanut Chicken
Chicken meat in an exquisite peanut sauce
Cochito
Pork meat seasoned with spices, cooked in a marinade and then baked in the oven, served in the traditional style.
Stuffed chilli pepper
A speciality of ground beef, vegetables and chopped condiments, wrapped in a poblano pepper skin. It is served with rice and a tomato cream sauce with a touch of achiote and thyme.
Chancleta
A special delicacy, made with Chayote pulp, served in the thorny skin of this typical Mexican fruit.
Stuffed Banana
A banana paste-based delicacy, topped with sweet bean jam, topped with cream.
Flan
A classic homemade dessert.
